($20) Green-tinged straw. Vibrant aromas of lime zest, green apple, white flowers and chalky minerals, with a subtle herbal nuance in the background. Silky and precise, offering mineral-laced citrus and orchard fruit flavors that put on weight with air. Picks up a tarragon note on the dry, incisive finish, which lingers with strong, mineral-driven tenacity. This pure, racy wine would be a superb companion to fried oysters or clams.

($50) (a methode champenoise rendition of Ameztoi's pink Txakoli, made from hondarribi zuri and a bit of hondarribi beltza and with 6 g/l dosage): Pale pink. Fresh, mineral-laced red berries, orange zest and white flowers on the highly perfumed nose. Fleshy and seamless in texture, offering juicy raspberry and cherry flavors and a jolt of spiciness on the back half. Clings with very good authority on the stony, spice-tinged finish, which leaves candied rose and white pepper notes behind. This wine was bottled exclusively in magnums.

($21) (100% hondarribi beltza): Pale, bright violet. Vibrant redcurrant and cherry scents are complemented by a sexy floral quality and a hint of white pepper. Dry, nervy and precise, offering bitter cherry and blood orange flavors that pick up a subtle sweetness with air. Clean, nervy and focused on the finish, which lingers with excellent spicy intensity. Wild stuff: this would be fantastic with young cheeses, from any mammal.

($19) Pale yellow.  Pungent, mineral-laced aromas of pear, floral honey, lemon pith and fresh herbs.  Densely packed orchard and citrus fruit flavors are brightened by zesty minerality and a hint of white pepper.  Refreshingly bitter on the finish, with the mineral note repeating.

($20) (100% hondarrabi beltza):  Bright purple.  High-pitched cherry, blueberry and floral aromas, with a zesty mineral topnote.  Juicy, incisive and mineral-driven, offering pliant cherry and dark berry flavors that gain sweetness with air.  The mineral quality adds bite to the finish, which features fine-grained tannins and a hint of candied violet.

($19) Bright straw.  Citrus fruits, green apple and herbs on the highly fragrant nose and in the mouth.  Stony and tight, with impressive finishing clarity and lingering honeysuckle and lemon nuances.

($19) (made from a blend of 50% hondarribi beltza and 50% hondarribi zurri, from vines that are reportedly over 150 years old):  Very pale pink.  Ethereal, mineral-accented aromas of citrus fruits, strawberry and white flowers.  Dry and tightly focused, with energetic orange peel and red berry flavors that show very good clarity.  Clean and tangy on the precise finish, which leaves white pepper and mineral notes behind.
