In the heart of Ribera del Duero is a family owned winery that produces a wine from a grape called Albillo: Yunquera. Although it is rarely ever seen outside of Spain, Albillo has been grown in Ribera del Duero for as long as anyone can remember. As a white grape in a land of red wines, it has historically been ignored, used only in small quantities to add acidity and aromatics to the red wines. The growing popularity of white wines from other parts of Castilla y León, specifically Verdejo from Rueda, has led a couple of winemakers in Ribera del Duero to try their hand at producing white wines from Albillo. The terruño here has something to do with the growing popularity. The vineyards sit at an elevation of over 850 meters with a southeastern exposure and the soils are comprised of poor clay and limestone. To retain the uniqueness of this grape, the wine is fermented in temperature-controlled stainless steel and bottled without aging.
